Gila Grill offers classic comfort food on NMSU campus
"Gila Grill is a unique dining concept for a university setting," said Vinnie Crispino, Sodexo retail dining director at NMSU. Crispino came up with the idea for Gila Grill, thinking, "What college kid doesn't love a grilled cheese sandwich?"
Gila Grill opened in the Corbett Center Student Union Food Court in August, and has been a hit ever since. All sandwiches are cooked to order and are served on the customer's choice of sourdough, rye, Bavarian, honey wheat or white breads, baked on-site daily. While the restaurant offers 11 types of cheese, including vegan cheese, as options for its popular grilled cheese sandwich, it also offers unique items like the Pimiento Mac and Cheese Melt (yes, it is a sandwich), a vegetarian Parma Melt and green chile cheese fries with your choice of cheese. Even the coleslaw at Gila Grill is unique - it contains bleu cheese.
"Although Chik-Fil-A remains number one in sales for the food court, Gila Grill quickly moved into second place," said Katrina Miner, marketing director for Sodexo at NMSU.
Gila Grill replaced Slice of Life Pizza in the Food Court and has far surpassed expectations. Sodexo's regional retail director plans to visit NMSU soon to evaluate Gila Grill as a potential brand to add to Sodexo's family of brands, system wide.
If the food isn't reason enough to visit, stop by Gila Grill from 6 to 8 p.m. Tuesday, Oct. 16, for Tattoo Night, complete with DJ entertainment. Free Gila Grill temporary tattoos will be handed out until they're gone.
